I’ve always been a chocoholic and once upon a time I could easily devour a block of Dairy Milk in one evening (gross, I know!).
For the past 15 years or so it’s very much been quality over quantity, and these days, I just lurvvvee making my own. Last week I made some organic raw choc coconut slice (think Bounty but refined sugar and crap-free) and since so many of you asked for the recipe, here it is…………..
For the chocolate on top, I follow Jo Whitton’s Basic Raw Dark Chocolate recipe on page 214 of her Quirky Cookbook (she also has it on her blog here). There’s no need for me to tweak this – as always, Jo has it spot on!
For the coconut base I mixed 1 cup coconut milk, 4 tablespoons rice malt syrup and 3 tablespoons coconut oil together over low heat in a saucepan. Once combined I stirred in 2 cups of desiccated coconut.
I pressed the coconut mixture into a pan and poured the chocolate over the top, placing into the freezer to set.
You’ll need to store the slice in the freezer so it stays firm.
